Feather blade

The feather blade is cut from the shoulder of beef. The feather blade has a sinew running through it which softens during simmering. If you remove this sinew (splitting), you can also fry the feather blade as steak. The meat has a beautiful marbling and after cooking delivers an unrivalled taste experience.
